Potato dumplings with a smoked meat filling - recipe

In an encyclopaedia of Czech cuisine the ‘dumplings’ entry would run to several pages. Potato dumplings with smoked meat would take pride of place – but cooking and eating them is much better than writing about them...

Ingredients:

200 g smoked neck
900 g potatoes boiled in their skins
180 g wholemeal flour
80 g semolina
lard
2 onions
1 egg
salt
a little fine flour for dusting the rolling pin

Instructions:

Peel the potatoes and grate finely before adding the flour, semolina, eggs and salt. Work the mixture into a dough. Roll out into a 0.5 cm-thick sheet and cut out squares measuring around 5x5 cm. Wrap finely chopped pieces of the smoked meat in the dough to create dumplings and cook in salted water for 10–12 minutes. Remove the dumplings when ready and serve with onions fried in lard.
