Wedding tartlets - recipe

Baking wedding tartlets is a kind of ceremony in itself. And it takes two to get the job done properly. As soon as the oven is hot enough, the baking trays have to be put in and taken out one after the other. The reward for this fiddly work is these delicious traditional sweets, an integral part of any Moravian wedding.
Ingredients:
| 250 g fine flour 250 g medium flour 1 dcl milk 1 tablespoon sugar 150 g butter |
150 g fat yeast 2 eggs zest of 1 lemon jam |
Instructions:
Mix all the ingredients together (except the jam), adding more flour to stop the dough from sticking. Leave to stand for 15 minutes. Then it’s time to make the fillings – farmer’s cheese, poppy seed or nut. Sprinkle your work surface with flour and beat 2 eggs with a little milk. Create small balls of the dough around 2 cm across, shape these into tarts, place the filling in the middle, dunk them in the egg and milk and place on the baking tray. Make a small indentation in the filling with your finger tip and bake for around 30 minutes.
