Vanilla cream cake with fruit sauce - recipe

Even though the name of the sauce served with this cake (žahour) sounds scary, you don’t have to be afraid of sampling it; as every South Bohemian knows, žahour is an old Bohemian blueberry sauce. In combination with this dessert boasting a vanilla cream filling this is a real treat for anyone with a sweet tooth.
Ingredients:
| For the dough: 600 g medium flour 250 g sugar 250 g butter 1 egg For the cream filling: 1 l milk |
2 sachets of vanilla pudding 1 sachet of vanilla sugar For the blueberry sauce: Makes 6 portions 300 g blueberries 50 g sugar 100 g whipping cream |
Instructions:
Using your fingertips, create a crumbly dough from the flour, sugar, egg and soft pieces of butter. Blend the vanilla pudding mix with a little milk, and bring the rest of the milk to the boil with the sugar. Mix the two together and simmer for around 2 minutes until the mixture thickens. Sprinkle half of the dough on the baking tray which you have lined with baking paper. Carefully pour the hot cream mix onto the dough then put the other half of the dough onto that creating a sandwich.
Place in the oven and bake at 180 °C for around 30 minutes, by which time the dough should be crispy and golden brown.
To make the blueberry sauce, heat up the blueberries with some sugar then leave to cool down. Whip the cream and mix into the blueberries. Serve slices of the cake doused in the fruit sauce.
