Šumava potato and cabbage cakes - recipe

This traditional recipe for potato turnovers stuffed with sauerkraut and bacon uses ingredients, which our grandmothers harvested from field and sty. Unlike other potato cakes they are prepared in boiling water, which means their calorie count is not as scary – unless of course you smother them in fat at the end of the process.
Ingredients:
| 600-800 g potatoes 1 egg 150 g medium flour salt 180-200 g sauerkraut |
100 g lean bacon 1 small onion flour for dusting the rolling pin 2 tablespoons fat |
Instructions:
Grate the boiled potatoes onto a rolling board, then add the egg, medium flour and salt. Mix together into a dough and divide into 12-16 pieces.
Stuff these pieces with boiled sauerkraut, bacon and onion. Seal and boil for 8-10 minutes in salt water. Serve doused in fat.
