South Bohemian ‘Jordán’ carp - recipe

Jordán is a reservoir in the South Bohemian town of Tábor as well as a simple and tasty way of preparing carp. You don’t need any special ingredients or exceptional culinary skill. Just roast the fish in the oven, season the sauce and wish your fellow diners bon appétit!
Ingredients:
| 1 carp 90 g fat 1/2 lemon 2.5 dcl red table wine |
tablespoon butter 1/2 l water pinch of salt |
Instructions:
Gut and wash the carp and cut into reasonable portions. Sprinkle with salt and roast in fat on both sides. Baste with hot water and red wine. Season the juices with lemon juice, salt and a knob of butter and bring to the boil. Potatoes are a suitable side dish.
