Shrovetide doughnuts - recipe

The traditional Shrovetide festival was once followed by a fast – the reason this carnival celebration was once one of the biggest blow-outs of the year with heaps of food and drink. These days few observe the forty-day fast anymore, but the carnival and food have stayed.
Ingredients:
| 500 g wholemeal flour 30 g yeast 70 g sugar 150-300 ml milk 3 egg yolks salt |
lemon zest rum flour for dusting the rolling pin fat jam (red current or apricot) icing sugar |
Instructions:
Sieve the flour into a bowl and create an indentation in the middle to hold the crumbled yeast. Add sugar and a part of the lukewarm milk and leave in a warm place to rise. Then add the egg yolks, salt, grated lemon zest, rum and the rest of the milk.
Mix well to create a dough, cover with a table cloth and leave again in a warm place to rise. Then roll out the dough into a roughly 1cm-thick sheet.
Cut out discs around 10cm across from half of the dough. Spoon 10 blobs of jam onto the other half of the dough then press the discs onto the jam and seal around the edges. cut out the doughnuts and leave to rise again.
The final step is to fry the doughnuts in the fat on both sides until golden brown. Let the excess fat drip off then dust with icing sugar and serve.
