Roast pork ribs with raised potato cake - recipe

Every meat fan adores well marinated ribs. This simple but delicious dish is accompanied by baked South Bohemian potato cake.
Ingredients:
| ribs: 2 kg pork ribs 300 g ketchup 1 teaspoon of coffee 40 g garlic 100 g onion 100 g whole grain mustard 50 g sugar 100 ml Budvar 12° beer |
salt tri-colour pepper cmunda: 1 kg raw peeled potatoes 5 eggs 200 g wholemeal flour 42 g yeast 2 tablespoons sugar |
100 ml water 50 g garlic 30 g dried mushrooms marjoram crushed caraway seeds salt pepper lard and breadcrumbs for lining the roasting tray |
Instructions:
Finely chop the onion and garlic then add the ketchup, mustard, coffee, beer and spices to create a thick marinade, into which we place the ribs. Leave to marinate overnight. Next day, take the marinated ribs and place them on a roasting tray covered with baking paper. Roast for 30–40 minutes at 170 °C.
Potato cake
Create a dough base from the yeast, sugar, lukewarm water and a handful of flour. Finely grate the potatoes, then add flour, egg yolk, the dough base, crushed garlic, mushrooms, marjoram, salt, pepper and crushed caraway seeds. Mix the resulting dough well, folding in whisked egg whites as you go. Spoon out onto a greased roasting tray lined with breadcrumbs and bake at 170 °C for around 1 hour.
