Prague tripe soup - recipe

The Czechs are, without a shadow of a doubt, a nation of soup lovers. But there is one broth that diners sometimes dismiss out of hand without even trying it. Yes, this recipe is for tripe soup, which flaunts some great flavours when prepared well!
Ingredients:
| 1.5 l stock 1 l water 50 g fat 30 g bacon 2 onions 50 g fine flour 400 g boiled tripe |
200 g ham garlic marjoram salt pepper nutmeg 250 ml cream |
Instructions:
Take a saucepan and sweat some finely chopped bacon in fat. To this add some chopped onion and when this has reduced down a little, dust with flour and keep on the heat. Add the stock, cooked tripe, ham and spices, cook for a short while and add cream for a richer flavour.
