Potato cakes - recipe

One of countless variations on a potato theme, simple, quick but unforgettable, these crispy cakes are suitable for any meal. And for those who like their meat there’s some good news – pork crackling can be added to the ‚plain‘ version of these cakes in any amount.
Ingredients:
| 440 g boiled potatoes 1 egg 80 g wholemeal flour |
80 g semolina salt pork crackling |
Instructions:
Peel the boiled potatoes and grate, add the egg, salt, crackling, flour and semolina. Work into a dough. Roll into a long loaf and cut into discs. Roll these out flat and fry in fat until golden brown.
