Potato cakes with kale ragout - recipe

Golden brown potato cakes in this recipe are accompanied by kale ragout made with mushrooms, pork fat and cream.
Ingredients:
| For the potato cakes: 800 g peeled, boiled potatoes 200 g wholemeal flour 2 eggs salt fat or oil |
For the kale ragout: 500 g kale 100 g pork fat 200 g mushrooms 100 ml cream salt |
Instructions:
Grate the potatoes and mix with the other ingredients to form a dense dough. Roll this out into a 1cm-thick sheet (dust the work surface with flour beforehand). Then take a cup and cut out circles, which you then fry on both sides in fat until golden brown.
Kale ragout – Heat up the kale in some fat along with the mushrooms and pork fat. Pour in the cream and leave to reduce down. Season with salt to taste.
