Potato cakes with jam and poppy seeds - recipe

Minor miracles could sometimes be worked on old-style ranges. Let’s just be thankful that our modern kitchens were at least bequeathed our ancestors’ recipes, many of which allow us to sample delights such as crispy potato cakes with a jam filling to this day.
Ingredients:
| 800 g potatoes peeled and boiled the day before 300 – 400 g fine flour, amount according to the starch content of the potatoes 2 eggs 200 g plum jam (water or rum to dilute if required) |
100 g ground poppy seeds 50 g icing sugar salt fine flour |
Instructions:
Grate the potatoes, add the flour, eggs and salt and work into a dough from which you should then create gnocchi. Divide these into two equal parts and roll into discs. Bake on both sides without oil in a hot Teflon pan or on a range until they begin to blister. As soon as you take them off the heat, brush with hot fat and paste with plum jam (dilute with water or a drop of rum if required). Then sprinkle with finely ground poppy seeds mixed with icing sugar. The cakes can be folded over like pancakes, or another regional variation sees cooks folding them up into a kind of sweet ravioli.
