You'll find this classic dish on the menu at many a pub worth its salt. So perhaps you are wondering why you should bother to cook it at home. Well, this is because in Moravia every housewife worth her salt must be able to make homemade dumplings and sauerkraut. And the aroma of roasting meat wafting through the house means she won't stay alone at the table for long!

Ingredients:

750 g pork side or
shoulder
1 onion
2 cloves of garlic
oil
1 tablespoon of plain
flour
water
caraway seeds
salt
for the sauerkraut:
1 large white cabbage
1 onion
1 tablespoon of plain flour
1 raw grated potato
water
fat or oil
caraway seeds
salt
sugar
vinegar

for the dumplings:
1 kg potatoes boiled in their skins
1 egg
200 g wholemeal flour
150 g semolina, salt

Instructions:

Fry the chopped onion in the oil until golden brown. Spread this on the roasting tray and lay the meat, chopped into large pieces, on top. Sprinkle with caraway seeds and chopped garlic. Put into the oven which has been preheated to a high temperature - after five minutes reduce the heat to 180 °C and then roast for around 45 minutes. Occasionally mix and spoon over the juices. Take the meat out, add some flour to the juice, and cook.

Remove the core of the cabbage and chop into strips. Blanche with boiling water and shake in a sieve. Place in a pan with a little water and cook until semi-soft. Finely chop an onion and fry in fat until pinkish. Add the caraway seeds, dust with sieved flour and gently fry. Mix this and the grated potato into the cabbage. Cook until soft. Finally, add sugar, vinegar and salt to taste and cook some more.

Take the cold boiled potatoes and pass through a mincer. Add some beaten eggs, sieved flour, semolina and salt. From this you create a firm dough, which you then divide into 4 equal parts. Roll each into a cylinder shape and boil gently in water for 15-20 minutes. When ready, cut the dumplings into slices.
