Poppy seed potato gnocchi - recipe

For those not in the know, this is a classic Czech dessert. No exotic ingredients and loved by generations – the following is a recipe for sweet Czech potato gnocchi.
Ingredients:
| 1 kg potatoes 300 g wholemeal flour 250 g fat or butter salt |
To be sprinkled on top: ground poppy seeds mixed with icing sugar or hard farmer’s cheese |
Instructions:
Peel and dice up the potatoes and cook for 15 minutes in salted water (until parboiled). Drain off the water leaving about 1/3 in the pan with the potatoes (don’t pour the rest down the sink as you may still need it). Add the wholemeal flour, and with the end of a wooden spoon make holes in the flour layer so that you can see the water underneath. Return to the hob on a minimum heat and leave for 15–20 minutes. Then mash the potatoes until very smooth, taking out any lumps by pasting to the side of the saucepan (for up to 10 minutes) and process in this way until the mixture doesn’t stick to the spoon. Season to taste. Finally take a spoon greased in fat and gouge out gnocchi. Boil in water for around 3 - 5 minutes.
Sprinkle with a mixture of poppy seeds and sugar, drizzle with butter or fat and serve.
