Pikeperch in caraway seeds - recipe

This is a classic and as well as a very quick way of preparing Czech freshwater fish. Instead of pikeperch you can use carp, pike or trout – just sprinkle with caraway seeds, roast and serve.
Ingredients:
| 800 g pikeperch 20 g butter 50 g fat |
fine flour salt caraway seeds |
Instructions:
Sprinkle the fish with salt and caraway seeds and dust with flour. Slow roast in hot fat on both sides until soft. Mix the fat with a little water, bring to the boil and drop in a knob of butter to make the sauce. This should be poured over the fish on the plate.
