Pancakes with warm fruit topping - recipe

Pancakes can be both a pudding or a main course. Fry to perfection, cover in forest fruits, give them a squirt of cream and sit back to take the applause…
Ingredients:
| For the pancake dough: 250 g fine flour 25 g yeast 1 eggs 300 ml milk 20 g vanilla sugar 50 g diced almonds pinch of salt |
oil 50 g sugar For the fruit topping: 400 g fresh or frozen forest fruit 50 g sugar 2 dcl whipping cream 1 teaspoon of ground cinnamon |
Instructions:
In a bowl mix the yeast at room temperature with the sugar. As soon as it begins to thin, add warm milk (maximum 70 °C!), flour, eggs, salt, vanilla sugar and almonds, and work into a dough, which you should leave under a tea towel to rise for around half an hour. In a pan (or special pancake griddle) fry the pancakes in oil until golden brown on both sides. Whip the cream with cinnamon. Heat up the forest fruits in a saucepan with sugar and spread over the pancakes. Decorate with cinnamon and cream, or apricots and mint leaves.
