This tangy morsel will bring a smile to the face of any uncle you may have from Olomouc, and you can also have a go at making a curious kind of mashed potato to go with it. The side dish containing mashed potatoes, sauerkraut and onion can actually be made on its own as a quick evening meal.


For the cheese fritters:
8 pieces of Olomouc cheese
8 slices of salami (such as uherský salami, kostelecký or křemešník)
1 egg
2 tablespoons milk
fine flour
For the mash:
500 g potatoes
3 tablespoons milk
500 g sauerkraut
1 onion
1 tablespoon fat
handful of parsley


Sandwich a slice of salami between two slices of Olomouc cheese. Secure with a cocktail stick, coat in flour, egg and breadcrumbs (in that order) and fry until golden brown. Peel and boil the potatoes in salted water until soft. Drain and mash with hot milk. Peel and finely chop an onion, fry in fat, add the sauerkraut and simmer for a short while. Mix this with the potato and season with chopped parsley, pepper and salt if required.
