If you really want a Czech classic you can enjoy, duck roasted to a golden brown hue in honey is definitely the dish for you. Combine this on the plate with sides of sauerkraut and garlic-infused potato dumplings, and your dinner guests will sing your praises for a long time to come.

Ingredients:

1 duck
100 g salt
caraway seeds
300 ml red wine
200 ml water
100 g honey
For the red sauerkraut:
1 small red cabbage
100 g onion
200 g apples
50 g prunes
50 ml vinegar
100 g sugar
2 tablespoons fat
salt
For the potato dumplings:
400 g potatoes boiled in their skins
100 g wholemeal flour
1 egg
2–3 cloves of garlic
50 g smoked pork fat
marjoram
salt
pepper

Instructions:

Rub salt into the duck, sprinkle with caraway seeds and baste with a jar of honey. Arrange on the roasting tray and pour over some red wine and water. Leave to marinate, preferably overnight. Put in the oven and roast at 200 °C for around 20 minutes, then put on the lid and roast for a further 2 hours at 165 °C. Baste throughout with the bird’s own juices, plus wine and water if you like. When almost ready, remove the lid and allow the skin to turn golden brown.

Red sauerkraut

Sweat some onion in fat until transparent then throw in the chopped red cabbage. Sprinkle with sugar and leave to caramelise. Add the sliced prunes, water and vinegar, and leave to simmer with the lid on for around 20 minutes. When just about ready, grate an apple over the pan, simmer some more then add more salt, sugar and vinegar to taste.

Potato dumplings

Peel the potatoes and grate. Add flour, eggs, crushed garlic, marjoram, lightly fried pork fat, salt and pepper. Work quickly into a dough (potato dough loosens quickly), roll into thick sausages and cook for 15–20 minutes in salt water (or you could try steaming).
