Haná pear doughnuts - recipe

Some Czechs among you may remember grandmother making these on an old fashioned wood burning range. You’ll probably have to make do with a baking tray in the oven, but the result will be just as good. Homemade doughnuts with a pear jam filling and served with famer’s cheese and soured cream will certainly make you popular for miles around.
Ingredients:
| 400 g fine flour 15 g yeast around 150 ml soured cream 20-30 g sugar 50 g butter 1 egg salt flour |
For the filling: 300 g pears 3-4 tablespoons sugar soft farmer’s cheese 200 ml sour cream icing sugar |
Instructions:
Pass the flour through a sieve into a bowl. Make an indentation in the flour into which we place the crumbled yeast, sugar and part of the lukewarm cream. Mix together then leave in a warm place to rise. Then add the eggs, melted butter, salt and the remainder of the warm cream. Work into a smooth dough. Cover the bowl with a teacloth and leave in a warm place to rise again.
Divide the dough into 12 pieces on a surface coated with flour. Roll these into balls then flatten out into discs. Leave to rise again in the oven then bake on both sides on a baking tray.
Serve the doughnuts with pears cooked in sugar, sprinkle with grated hard farmer’s cheese, and douse in soured cream. Dust with icing sugar to taste.
