Ham with horseradish sauce - recipe

Do you miss your mother’s sauces? Well, use this recipe as an instruction manual to recreate them in a straightforward way. This version includes grated horseradish, but you could also add dill, gherkins or mushroom. Pour it all over whatever you happen to fancy that day.
Ingredients:
| 150 g butter 3 medium-size onions 80 g fine flour 800 ml meat stock 200 ml cream |
salt ground white pepper 100 g fresh horseradish 600 g ham from a whole ham shank |
Instructions:
Melt some butter and sweat down a finely chopped onion until it begins to turn transparent. Dust with flour and cook down to create a roux. Stirring constantly, pour in the stock and simmer for 20 minutes. Season to taste with salt and white pepper; give the sauce a smoother consistency with some cream and heat through. Finally throw in the grated horseradish and pour over some warm slices of ham.
