Goose liver with almonds - recipe

This celebrated delicacy featuring the wonderful flavour of almonds often appears on menus as a starter. Best served with wholemeal rolls or bread.
Ingredients:
| 500 g goose liver 80 g almonds goose fat |
whole peppercorns cloves salt |
Instructions:
Clean the goose liver and pierce with blanched and peeled almonds which you should cut into pieces lengthwise. Sprinkle with salt and sweat in fat with the cloves and whole peppercorns. When ready, leave to cool, cut into pieces and pour over the juices (having first removed the spices). Decorate with a lettuce leaf or other raw vegetables.
