Goose giblets in paprika - recipe

It’s well known that the highlight of any autumn harvest feast is the roast goose. But the giblets are also tasty and here we suggest a light paprika sauce to go with them. Excellent sides include bread dumplings or potato gnocchi.
Ingredients:
| 400 g goose giblets 2 onion 100 ml cream 2 teaspoons sweet Hungarian paprika 200 ml meat stock |
100 g goose or pork fat 100 g soured cream 1 teaspoon crushed caraway seeds salt |
Instructions:
Sweat some finely chopped onion in fat. Add the giblets sprinkled with salt, caraway seeds and paprika and fry. Cover everything with stock and simmer until soft. Give the dish a milder flavour with some cream, add salt to taste and reduce.
