This recipe is easy, and you won't have to go rooting around in the cupboard for the pancake iron and cover it with fat - you can just use a modern frying pan! If you'd like to return to ultra-traditional ways of eating pancakes, forget the marmalade - soak them in melted butter and sprinkle with cinnamon sugar.

Ingredients:

400 g plain flour
around 650 ml milk
50 g sugar
25 g yeast
1 tablespoon of oil
2 egg yokes
½ sachet of vanilla sugar
salt
lemon zest

for baking:
mixture of butter and oil

for the filling and
decoration:

forest fruit marmalade
whipped cream
sugar

Instructions:

Crumble the yeast into a saucepan, add the sugar, part of the lukewarm milk and a little flour. Mix well, cover with a cloth and leave in a warm place to rise. Then pour over the rest of the lukewarm milk, add the egg yokes, the vanilla sugar, oil, salt, lemon zest and the remainder of the flour. Mix the thin dough well, and once again leave in a warm place to rise. During the process, mix the dough several times.

Heat up the frying pan and slowly fry the pancakes in a mixture of butter and oil. Spread with forest fruit marmalade or decorate with fresh forest fruit and whipped cream. Sprinkle with sugar to taste.
