East Bohemian potato cakes - recipe

Potatoes grow well in the foothills of the region's mountain ranges, and they're present once again in this traditional recipe from the area. Apples, the ordinary bought type, but preferably from your own garden, also belong in this sweet dish. These delicious cakes are sure to have disappeared even before you have managed to fry the last one!
Ingredients:
| 1 kg potatoes boiled in their skins 400 g wholemeal flour 1 egg |
5 apples icing sugar cinnamon oil salt |
Instructions:
Make a soft dough from the cold, peeled and mashed potatoes, flour, eggs and salt. Roll and cut out small squares. Fill each of these with grated apple and sprinkle with sugar and cinnamon. Fold over the corners of the dough squares so that they meet in the middle. Fry these in hot oil and, when ready, sprinkle with cinnamon sugar.
