Cream of mushroom soup - recipe

East Bohemia is about walks in stunning landscapes, and when the mushroom picking season is in full flow you’re sure never to return from a trip into the woods with an empty basket. If it’s just stopped raining and you need to warm up a bit, this rich cream soup, aromatic with freshly picked wild mushrooms, is sure to do the trick.
Ingredients:
| 150 g potatoes salt 2 tablespoons fat 1 small onion |
200 g freshly picked mushrooms ground pepper dill 2-3 tablespoons soured cream |
Instructions:
Peel the potatoes, cut into pieces and immerse in water with a pinch of salt. Cook slowly until soft.
Fry the finely chopped onion in fat, then add the chopped mushrooms. Season with salt and pepper and leave to cook.
Add the boiled potatoes, finely chopped dill, soured cream and heat through.
