Christmas mushroom bake - recipe

Once people would have enjoyed this dish at Christmas time only, but today it is commonly eaten for dinner at any time of the year. It’s also one of only a few recipes in which groats (peeled barley) play the leading roll. In the past this was a common ingredient, but one which was largely replaced with rice. Today groats are a rare sight in the kitchen.
Ingredients:
| 300 g groats handful of dried mushrooms 2 garlic cloves 3 tablespoons butter crushed caraway seeds |
marjoram ground pepper salt butter |
Instructions:
Soak the dried mushrooms for several hours in cold water, then cook until soft and drain. Rinse the groats in boiling water, then cook until soft in salted water flavoured with caraway seeds. Drain off the water, add crushed garlic, salt and pepper, a little marjoram and butter. Mix well before adding the mushrooms and spreading out onto a greased baking tray. Place in a preheated oven and bake until golden brown.
