Forget your sewing basket full of needles and thread, all you need for this tasty dish is a plate . This ‘cake’ made up of layers of spinach and veal brains is topped with grated cheese that melts temptingly in the oven. Best shared with others so that the buttons on your trousers don’t pop!

Ingredients:

400 ml milk
300 ml cream
3 eggs
salt
300 g medium flour
oil for frying the pancakes and for greasing the baking tray    
For the filling:
500 g fresh spinach
60 g butter
salt
ground pepper
50 g oil
100 g onion
300 g veal brains
100 g grated cheese
50 g butter

Instructions:

Create a pancake mix from the milk, cream, eggs, salt and flour. Leave this aside a while then fry the pancakes in the oil.
Wash the spinach and heat up in the butter, adding a little salt and pepper. Fry the finely chopped onion in butter too, before dropping in the chopped brains and cooking for 10 minutes.
On a greased baking tray create the ‘cake’ from alternating layers of pancake, spinach and brains. The last layer should be a pancake onto which we grate some cheese and drizzle with melted butter. Then bake in the oven until ready.
