Bread soup with vegetables - recipe

Even if your larder isn’t overflowing with raw ingredients, you’re sure to always find what’s needed for this dish. All you require is a few carrots, some celery, some parsley, meat stock and a few pieces of bread. Grated bread makes a wonderfully thick broth and this first course or hearty snack is ready to plate up.
Ingredients:
| 150 g root vegetables 1 small onion 1-2 tablespoons of oil or fat 150 g black bread 750 ml stock |
salt ground pepper crushed caraway seeds parsley |
Instructions:
Fry the finely chopped onion and vegetables in a saucepan. Add the grated bread, pour in the stock (bones included should you wish), add a pinch of salt and pepper, throw in some caraway seeds and mix well. Serve with finely chopped parsley.
