Sauces of all kinds are one of the main features of Czech cuisine. They appear on Czech plates most often in the company of beef. This is the case here, too, and this recipe proves that you can make a good sauce from practically any vegetable.

Ingredients:

600 g boiled beef
100 g butter
100 g pickled gherkins
1 onion
300 ml beef stock
300 ml whipping cream
freshly ground white pepper
salt

Instructions:

Finely dice the onion and sweat in butter. Pour in the cream and stock and leave to reduce by around a half. Season with pieces of gherkin, salt and white pepper. Simmer and serve with boiled beef and bread dumplings.
