Pilsen is synonymous with beer, so it comes as little surprise that the local amber nectar features as an ingredient in this regional speciality. Marinated beef with a sharp sauce is best enjoyed with light dumplings and a bunch of good friends.

Ingredients:

400-500 g beef
100 g paprika-rich sausage
125 ml low-alcohol beer
sprig of parsley
sprig of dill
100 g lean bacon
1 large onion
salt
crushed pepper
ground ginger
fine flour

Instructions:

Fill the meat with the sausage, put in a saucepan add the parsley, dill and beer and leave to marinate for 4-5 hours.
Lightly fry the lean bacon and onion then add the marinated meat along with the marinade. Add salt, spices, pepper and ginger, then simmer with the lid on until soft.
Remove the meat, thicken the sauce with flour and bring to the boil. Simmer for a while then pass through a sieve.

Serve with:

bread dumplings
