Autumn’s bad weather is behind us and Moravia is celebrating its traditional feast with roast goose. Come and join in the fun and stop counting the calories for a few days. Roast goose with dumplings and sauerkraut is simply irresistible…
Ingredients:
| 1 goose salt caraway seeds |
Instructions:
Take the gutted goose and coat with salt inside and out. Sprinkle with a few caraway seeds and place onto the roasting tray. Pour a little water into the tray, then roast the bird breast down, pouring water over the meat at regular intervals. Roast until the goose turns red. If it is a bird with a lot of fat on it, prick with a fork and remove the fat that comes oozing out. Turn the bird over add hot water and roast again until red. Goose goes well with sauerkraut and dumplings as well as potatoes. Goose is particularly tasty when roasted in a deep stone container.
